I don’t normally like blue cheese but when it comes to dips, I would always give blue cheese a thumb up. Blue cheese lends a distinctive, deep and complex flavor to this particular blue cheese bacon dip appetizer, flavor I find truly irresistible, especially when served with spicy crackers. Adding bacon and dry roasted peanuts to this dip bring things to a whole new level of tastiness!

I also love it that blue cheese makes it hard to have too much of this dip as it’s very nourishing! I think this dip can easily be used as salad dressing too or as a dip for potatoes or buffalo wings. Just my opinion but I see this amazing dip as being so versatile! And guess what? This delicious dip makes an awesome snack too! If you want to make it lower in fat you could use lean smoked bacon and low fat yogurt instead of buttermilk and sour cream.

Ingredients:

  • bacon – I like to cook my bacon in a non stick skillet, no oil added then drain all the fat on paper towels.
  • garlic – can be used smashed or chopped finely.
  • cream cheese – I soften my cream cheese on the counter for about 30 minutes before using.
  • buttermilk – low fat works just as great as high fat
  • sour cream – same as above, use low fat it you like your dip lower in calories
  • blue cheese – crumbly cheese works best. Rather than blending the blue cheese with the rest of the ingredients, I like to feel the little chunks in my dip.
  • chopped fresh chives
  • chopped fresh dill
  • dry roasted peanuts, halved
  • crackers – to me, spicy crackers work best for this dip but any cracker would go well with this recipe
  • Grapes – this is optional if you like to add a bit of a fresh touch to your dip. Blue cheese and white grapes make an amazing pair!
  • Pickled cucumbers – also optional but highly recommended if the dip seems a bit too heavy for your taste.

Directions:

  1. Cook chopped bacon in a skillet over medium-high heat until crisp. Drain bacon on a paper towel and set aside.
  2. Add smashed garlic to skillet, and sauté for a minute.
  3. In a bowl, beat cream cheese at medium speed with an electric mixer until smooth. Add buttermilk and sour cream, beating until well combined.
  4. Stir in bacon, garlic, blue cheese, chives and dill. Sprinkle dry roasted peanuts.
  5. Serve with spicy crackers, grapes or pickled cucumbers.

If you want a warm dip (I personally find it too heavy), spoon the whole mixture evenly into 4 individual baking cups. Skip the peanuts for this step. Bake at 350 F for 15 minutes or until golden. It may bubble a bit. Sprinkle evenly with peanuts when done.

Ingredients

  • 7 bacon slices chopped
  • 3 garlic cloves smashed
  • 2 packages 8 oz cream cheese, softened
  • 1/3 cup buttermilk
  • 1/3 sour cream
  • 4 oz blue cheese
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh dill
  • 3 tablespoons dry roasted peanuts halved
  • Spicy crackers
  • Grapes optional
  • Pickled cucumbers optional

Instructions

  • Sprinkle dry roasted peanuts.
  • Serve with spicy crackers, grapes or pickled cucumbers.
