Add the ribs to a soup pot and cover in water. Bring the water to a boil and skim the scum off. Add 1 cup of water and continue boiling for about 20 minutes
Meanwhile heat oil in a skillet then add onions, peppers and carrots to a skillet. Sauté until slightly soft but still a little crisp, about 3 minutes.
At the 20 minute mark, add sautéed vegetables to the pot, add chopped zucchini and egg noodle. Add a bit more water fi needed and bring the soup to a rolling boil. Then turn the heat to low and simmer until noodles are cooked through, about 10 minutes.
Add eggs and mix with a fork to distribute in the pot. Cook for an additional minute. Add salt and pepper and turn the heat off. Add chopped lovage and cover the pot with a lid for 5 minutes.
