Lemon Chicken Orzo With Baby Spinach & Cherry Tomatoes

Ingredients
For the baked chicken:

skinless boneless chicken breasts
cut into strips
juice from half a lemon

tablespoon
olive oil

teaspoon
lemon zest

cloves
garlic
minced

teaspoon
dry oregano
1/4
teaspoon
salt
1/4
teaspoon
ground pepper
For the orzo salad:
3/4
cup
whole-wheat orzo
cooked according to package
2
cups
baby spinach
1
cup
chopped cucumber
1/2
cup
chopped red onion
1
cup
cherry tomatoes halves
2
tablespoons
lemon juice
1
tablespoon
olive oil
1/2
teaspoon
dry thyme
1/4
teaspoon
salt
1/4
teaspoon
ground pepper
You will also need:
large mixing bowl
salad bowl
baking sheet
aluminium foil
wood spatulas
Instructions
Pre heat oven to 425 F
Line a baking sheet with aluminium foil
Bring 1 quart water to a boil in a saucepan and cook orzo as instructed on the package.
Meanwhile, in a large bowl, mix chicken with all chicken ingredients and mix to coat well using a couple of wood spatulas.
Place chicken in the prepared baking sheet and bake in the oven until lightly browned, 20-25 minutes.
In a salad bowl, add the orzo salad ingredients and mix to coat using a couple of wood spatulas.
Serve chicken warm with the orzo salad on a side.
