Roasted garlic and herb pork loin filet with mustard sauce

Ingredients

of Garlic and herb pork loin fillet
2-3
Tbs
flour
1
Tbs
butter

Tbs
oil
Salt to taste
Pepper to taste
Thyme
optional
150
ml
= 5 oz still water
For the mustard sauce:
1
medium onion
50
ml
white wine
or water if you don't do alcohol
200
ml
sour cream
2
Tbs
mustard
Salt to taste
Pepper to taste
Instructions
If you can't manage to cut thin slices, beat the meat to flatten a bit
Season with salt and pepper (you might not need to as the herbs in marinade give enough flavor)
Sprinkle some thyme (optional)
Run through flour and then shake the excess flour off
Fry on both sides in skillet in hot oil and melted butter
When it's roasted, place meat on a plate and keep covered
In the same pan/skillet where the meat was cooked, add the chopped onion and cook until it becomes soft then pour wine or water
Let it cook for one more minute then add the sour cream, mustard, salt and pepper
Add 150 ml = 5 oz water, and put the steak to cook with the sauce
Let it simmer for about 10 minutes
Flip the meat after 5 minutes if not covered by sauce
If the sauce is too thick, add a few tablespoons of water
You can serve with rice, baked or boiled potatoes or pasta.
