Taco stuffed sweet potatoes
Taco Stuffed Sweet Potatoes made with oven-roasted sweet potatoes, ground beef, creamy guacamole, tomatoes, cilantro, and a good squeeze of lime juice are the perfect quick, healthy dinner to make on weeknights.

Ingredients
For the taco ground beef:

ground beef

onion
diced

Garlic clove

cumin
one Tsp oregano

paprika

Salt and pepper to taste
For the potatoes

Large sweet potatoes

Tbsp
olive oil
Salt and pepper to taste

Taco ground beef

Refried beans
1
Cup
guacamole
1/2
Cup
diced tomatoes
Instructions
To bake the potatoes preheat oven to 350 degrees.
Rub the sweet potatoes with olive oil and sprinkle with salt and pepper.
Place in a baking tray and take to the oven.
Bake for 40 minutes or until tender.
Remove from oven and set aside.
Meanwhile prepare the taco ground beef.
Heat olive oil in a large skillet over medium heat.
Add onion and garlic clove.
Cook until translucent.
Add cumin, oregano, paprika, and chili.
Incorporate the ground beef and salt and pepper and cook stirring occasionally until golden brown.
Remove from fire.
To stuff the potatoes, cut the sweet potatoes lengthwise.
With the help of a spoon scoop out some of the flesh.
Fill with taco ground beef, refried beans and guacamole.
Top with the tomatoes and some chopped cilantro.
