Ingredients

large sweet potatoes
1
cup
diced turkey
The juice of one lime
1/3
cup
dried cranberries
1/3
cup
chopped pecans
1
tablespoon
butter
melted
1
tablespoon
honey
Salt to taste
Instructions
Preheat oven to 400 degrees.
Bake sweet potatoes in microwave until soft.
Cut in half lengthwise, scoop the flesh out and keep the skins.
Mash the flesh, then mix with diced turkey, dried cranberries, half the lime juice, and salt to taste.
Place back into skins.
Mix pecans with butter, honey, and a few drops of lime juice.
Top the stuffed skins with the pecan syrup.
Bake in preheated oven for about 10 minutes.
