Vegetarian Stuffed Pizza Rolls Recipe

Ingredients
1
can pizza dough
a little flour for dusting the working surface
about 3 tbsp tomato sauce
1
cup
mushrooms
diced
1
cup
red bell peppers
diced
2
cups
mozzarella cheese
grated (after making the recipe I would suggest using the cheese cut in cubes instead of grated for a more gooey, chewy inside)

tbsp
butter
melted plus more to butter the baking dish
1
tsp
dry thyme
salt and pepper to taste - optional
depending on your tomato sauce
marinara sauce for dipping - optional
You will also need:
rolling pin
pizza wheel
baking dish
pastry brush
Instructions
Preheat oven to 425 degrees
Unroll pizza dough onto a lightly floured surface and press into a larger rectangle.
Cut rectangle into squares (I first cut it in 16 squares then I realized I got some dough left and I made 9 more so I ended up with 25 squares).
Add tomato sauce, mushrooms, peppers and cheese (or your favorite ingredients) into the center of each square.
Gather the sides of each square up and pinch closed to create a ball.
Butter a baking dish.
Place each ball seam side down in the baking dish.
Stir melted butter and thyme together then brush tops of rolls with the mixture using a brush.
Bake for about 15 minutes or until rolls are golden brown.
If you like to add extra cheese on top, do so about 7 minutes into baking.
Serve simple or with dipping sauce.
