Lemon Chicken Orzo With Baby Spinach & Cherry Tomatoes

Ingredients

For the baked chicken:

  • 2 skinless boneless chicken breasts cut into strips
  • juice from half a lemon
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1 teaspoon dry oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

For the orzo salad:

  • 3/4 cup whole-wheat orzo cooked according to package
  • 2 cups baby spinach
  • 1 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1 cup cherry tomatoes halves
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon dry thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

You will also need:

  • large mixing bowl
  • salad bowl
  • baking sheet
  • aluminium foil
  • wood spatulas

Instructions

  • Pre heat oven to 425 F
  • Line a baking sheet with aluminium foil
  • Bring 1 quart water to a boil in a saucepan and cook orzo as instructed on the package.
  • Meanwhile, in a large bowl, mix chicken with all chicken ingredients and mix to coat well using a couple of wood spatulas.
  • Place chicken in the prepared baking sheet and bake in the oven until lightly browned, 20-25 minutes.
  • In a salad bowl, add the orzo salad ingredients and mix to coat using a couple of wood spatulas.
  • Serve chicken warm with the orzo salad on a side.
