Preheat oven to 300 F = 150 C (or your oven's lowest temperature)
Line a large baking sheet with parchment paper
Cut the zucchini in half, lengthwise and take the flesh out.
Finely chop the flesh until you get a paste like texture.
In a deep skillet, heat the oil and sautee the zucchini flesh until all liquid is gone.
Add the cheese and sautee for another minute or so until well combined with the zucchini flesh.
Remove from heat and add garlic, mixing well to combine.
Add salt and pepper to taste.
Fill the zucchini boats with the above filling and transfer to the prepared baking sheet.
Bake at 300 F in the middle of your oven until lightly golden (I'm sorry, I forgot to check the time when I put the baking sheet in the oven so I looked every once in a while to make sure they won't burn; I think it took about 30 minutes)
Once baked, remove from the oven, cool in the baking sheet then sprinkle goat cheese and decorate with fresh lovage leaves - this is optional.
