Egg Boat Quick & Easy Oven Baked Omelette
Breakfast ciabatta bread is perfect for nesting fluffy oven baked omelette, full of tasty ham, cheese, mushrooms and scallion! This egg boat is a super easy and quick way to serve breakfast on the go!

Ingredients

medium eggs
4
tbsp
milk
2
tbsp
cooked ham
diced
2
medium mushrooms
diced
1/2
scallions
chopped
1/2
cup
shredded provolone cheese
1/2
cup
diced provolone cheese
1/4
cup
crumbled feta cheese
2
tbsp
sour cream
2
medium small ciabatta breads
I used olives ciabatta for the extra olive flavor
You will also need:
medium bowl
small whisk
sharp knife
baking sheet
I baked mine on a pizza pan
Instructions
In a medium bowl, beat the eggs with a small whisk.
Add milk, mushrooms, scallion, cooked ham, provolone, feta and sour cream and mix to combine.
Using a sharp knife, make a rectangular hollow in each bread and remove the crumbs.
Fill the hollow with the omelette mixture above, half for each bread.
Place the breads on a baking sheet or a pizza pan and bake in the oven at 350 F for about 25-30 minutes or until the omelette gets a golden crust.
Remove pan from the oven and add diced provolone then return to oven and bake until cheese is melted.
Best served warm, as a whole or cut into slices.
