Lip-smacking Pizza Baked Potatoes You Will Just Have To Make

Ingredients

  • 4 large russet potatoes
  • 1 tablespoon oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup fresh mushrooms cut into small pieces
  • 1/4 cup sliced red onion
  • 1/4 cup green pepper cut into small pieces
  • 12 slices pepperoni cut into quarters

Instructions

  • Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
  • Wash potatoes by scrubbing them with a soft brush and warm water. Dry. Use a basting brush to brush each potato with oil and place onto the prepared baking sheet. Use a fork to poke several holes into the potato to allow steam to release when cooking.
  • Bake potatos for 60 minutes. Check the doneness by pressing a fork into the center of the potato. If the fork goes into the potato easily and smoothly it is done. If not, continue to cook for an additional 10-20 minutes.
  • Remove potatoes from oven and cut a slit into the center of the potato. Open the potato by pressing the ends inward. Use a fork to fluff the potato.
  • Add a spoonful of sauce to each potato followed by a handful of cheese. Add your favorite toppings. Return potatoes to the oven for 8-10 minutes or until cheese is melted.
