In a small microwave-safe bowl, melt coconut oil in the microwave at 10 second intervals until melted. If the coconut oil got too warm, allow it to cool.
Using a microplane, zest the entire lime
Pour the melted coconut oil into the sugar. Add zested lime into the bowl. Cut the lime in half and squeeze half the lime to the sugar mixture. Add the vanilla paste.
Whisk mixture together until well combined.
Add mixture into a container with a tight-fitting lid.
