Remove the stem and seed pod of the peppers, rinse and chop into 1/4”-1/2” pieces. Set aside.
Rub the potatoes under cold water to rinse them. Many potatoes have residuals left on them. Chop the potatoes into 1/4”-1/2” pieces and add to a mixing bowl.
Preheat the Air fryer to 400°f for 5 minutes.
Add the peppers and mix.
Drizzle the potatoes and peppers with the oil and toss until they are fully coated.
In a bowl, mix all the spices.
Once mixed, season the potatoes and peppers generously.
Fill the air fryer basket. Shake the basket to force the potatoes and peppers to settle.
Cook at 400° for 18 minutes, vigorously shake the potatoes and peppers every 3-4 minutes.
Once the potatoes and peppers are done, remove them and let them cool for a couple of minutes. Serve with your favorite breakfast or add to the filling breakfast tacos or burritos.
