Instructions
Add a little oil to a large soup pot and heat on a medium setting. Add the onion and chorizo and fry for 5 minutes, stirring frequently.
Add the garlic and fry for another minute, stirring constantly.
Add the chicken broth and potatoes, bring to a boil then reduce to a simmer and leave to cook for 20 minutes.
Add the kale and simmer for a final 2 minutes.
Season with some black pepper to taste.
