Ingredients

large chicken breast
boneless, skinless

small to medium size potatoes
unpeeled, chopped

cups
Brussel sprouts
Dijon Mustard

teaspoon
sea salt

teaspoon
ground black pepper
3
tablespoons
of olive oil
2
tablespoons
dijon mustard
3
tablespoons
honey
1
tablespoon
minced garlic
1
tablespoon
dried oregano

Instructions
Preheat the oven to 375 F. Grease a baking dish.
Halve chicken breast lengthwise and add in a large bowl with potato and Brussel sprouts.
In a small bowl, combine the Dijon mustard ingredients. Pour on the chicken and vegetables. Toss to coat.
Add the potatoes only in the baking dish and roast in the oven for 15 minutes. Leave the chicken Brussel sprouts in the bowl to marinate.
Remove the baking dish and add chicken with Brussel sprouts on top of the potatoes.
Bake in the oven for 20 minutes until the chicken is juicy and tender. Remove and serve.
