Lately I wanted to take healthier steps in terms of diet and since I always loved Mediterranean food I decided to incorporate more of this healthy but yummy food into my diet. In fact, at this point my diet is entirely focused on the Mediterranean food and this lemon chicken orzo is part of my new healthy but super delicious lifestyle.
And I could not be happier with this recipe (and the whole Mediterranean diet, as a matter of fact!). This chicken orzo is simply amazing! So easy peasy and quick to make but full of wonderful flavors! This chicken orzo recipe is also super filling and satisfying and together with the rest of the diet totally keeps me healthy, happy and full of energy.
But this healthy chicken salad makes a great dinner idea for the whole family! Who doesn’t like chicken, right? This lemon chicken orzo is light, bursting with lemony flavor, packed with healthy colorful vegetables and strips of tender chicken breast that are baked, not fried. Low calorie and low fat, this lemon chicken orzo is ready to eat in about 30 minutes! The ingredients listed below are for 4 servings.
Lemon Chicken Orzo
Ingredients:
For the baked chicken:
- 2 skinless boneless chicken breasts, cut into strips
- juice from half a lemon
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 2 cloves garlic, minced
- 1 teaspoon dry oregano
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
For the orzo salad:
- 3/4 cup whole-wheat orzo (cooked according to package)
- 2 cups baby spinach
- 1 cup chopped cucumber
- 1/2 cup chopped red onion
- 1 cup cherry tomatoes halves
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon dry thyme
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
You will also need:
- large mixing bowl
- salad bowl
- baking sheet
- aluminium foil
- wood spatulas
Directions:
- Pre heat oven to 425 F
- Line a baking sheet with aluminium foil
- Bring 1 quart water to a boil in a saucepan and cook orzo as instructed on the package.
- Meanwhile, in a large bowl, mix chicken with all chicken ingredients and mix to coat well using a couple of wood spatulas.
- Place chicken in the prepared baking sheet and bake in the oven until lightly browned, 20-25 minutes.
- In a salad bowl, add the orzo salad ingredients and mix to coat using a couple of wood spatulas.
- Serve chicken warm with the orzo salad on a side.
