There’s something about stuffed dishes that make me happy! I mean, when you read “stuffed” in a recipe title you know that is going to be something packed with flavor and totally delicious. These taco stuffed sweet potatoes are just like that!

First, they taste just like tacos thanks to the taco seasoned ground beef and all the delicious toppings. Second, it’s a recipe that’s super easy to follow, so it’s a really good recipe to make on hectic, busy weeknights. Finally, it’s healthy! These lip-smacking loaded baked sweet potato are packed with protein, good fats, healthy veggies, and complex carbs. Taco Stuffed Sweet Potatoes are also naturally gluten-free and paleo.

Can you make taco stuffed sweet potatoes in advance?

Yes! Actually, this is a great recipe if you are into meal prepping! You can store them in airtight containers and in the fridge for up to 4 days. Make a batch on Sunday and have a week of healthy lunches ready to go.

How to cook sweet potatoes

There are a lot of ways to cook sweet potatoes. I personally prefer to oven roast them because that makes the sweetness of the sweet potatoes pop! However, if you are short on time you can also cook them in the microwave. Yes, you read that right. You can cook your sweet potatoes in the microwave and the result is very similar to what you get when oven roasting them.

To cook in the microwave, wash your sweet potatoes, drizzle with olive oil and salt (just like if you were going to bake them), pierce a couple of times with a fork, and take to the microwave for around 6 minutes, and voila! All set.

Feel free to play with the toppings as much as you like. Add a big dollop of sour cream or some shredded cheddar for a creamy and cheesy twist. Or play with some pico de gallo or jalapeños to give it a spicy kick.

Ingredients:

For the taco ground beef:

  • 1/2 Pound ground beef
  • 1/2 onion, diced
  • 1 Garlic clove, minced
  • 1 Tsp cumin
  • one Tsp oregano
  • 1 Tsp paprika
  • 1/2 Tsp chili
  • 2 Tbsp olive oil
  • Salt and pepper to taste

For the potatoes

  • 3 Large sweet potatoes
  • 2 Tbsp olive oil
  • Salt and pepper to taste
  • 1 1/2 Cups Taco ground beef
  • 1 Cup Refried beans
  • one Cup guacamole
  • 1/2 Cup diced tomatoes

Directions:

  • To bake the potatoes preheat oven to 350 degrees.
  • Rub the sweet potatoes with olive oil and sprinkle with salt and pepper.
  • Place in a baking tray and take to the oven.
  • Bake for 40 minutes or until tender.
  • Remove from oven and set aside.
  • Meanwhile prepare the taco ground beef.
  • Heat olive oil in a large skillet over medium heat.
  • Add onion and garlic clove.
  • Cook until translucent.
  • Add cumin, oregano, paprika, and chili.
  • Incorporate the ground beef and salt and pepper and cook stirring occasionally until golden brown.
  • Remove from fire.
  • To stuff the potatoes, cut the sweet potatoes lengthwise.
  • With the help of a spoon scoop out some of the flesh.
  • Fill with taco ground beef, refried beans and guacamole.
  • Top with the tomatoes and some chopped cilantro.
