How to make pork in creamy mustard sauce

Treat yourself to a delectable pork loin in a creamy mustard sauce, a dish that will leave you wanting seconds!

Ingredients

To make this delectable dish, these ingredients combine to create a creamy and flavorful sauce that complements the tender pork perfectly:

  • Pork loin: This cut of meat is lean and tender, making it perfect for this recipe. Be sure to get good quality pork for the best results.
  • Flour: Used to coat the pork before frying, giving it a crispy texture.
  • Butter: Adds richness and flavor to the dish.
  • Oil: Used for frying the pork fillet. Canola, vegetable, or olive oil can be used.
  • Salt and pepper: For seasoning the pork and sauce.
  • Thyme (optional): Adds a delicate herb flavor to the dish.
  • Onion: Adds a sweet and savory taste to the mustard sauce.
  • White wine (or water): This adds moisture and acidity to balance out the creaminess of the sauce. If you don’t consume alcohol, water can be used as a substitute.
  • Sour cream: Gives the sauce a creamy texture and tangy flavor.
  • Mustard: The star of this dish, it adds a unique depth of flavor to the sauce. Dijon or whole grain mustard are great options.

I opted for adding some minced garlic for extra flavor but it’s only optional.

Substitutes

If you don’t have all the ingredients on hand, there are a few substitutes you can use. Instead of white wine, you can use chicken or vegetable broth for a similar flavor. For a dairy-free option, you can replace the sour cream with coconut cream or cashew cream. And if you don’t have pork loin, you can use chicken or tofu as a protein substitute.

Equipment

To make this pork recipe, these basic kitchen tools are essential for cooking the pork and preparing the creamy mustard sauce.

  • Frying pan: Used for cooking the pork fillet and making the sauce.
  • Tongs: Useful for flipping the pork while frying and removing it from the pan.
  • Spatula: To mix and stir the sauce while cooking.
  • Cutting board: Used to slice and prepare the pork loin.

Instructions to make pork in creamy mustard sauce

Creating this mouthwatering dish is simpler than you might think and just requires a bit of preparation. Follow these steps closely, and you’ll be savoring this delightful meal with your family in no time.

Preparations

  1. Prepare the Ingredients: Begin by slicing the pork loin into 6 equal slices if you didn’t purchases them already cut. Lightly dust each piece with flour, ensuring they’re evenly coated. This not only helps in thickening the sauce later but also gives a nice texture to the fillets. If you’re using thyme, now’s the time to chop it finely and sprinkle over the meat.
  2. Mustard Sauce Prep: Cut the onion julienne; this will allow it to blend smoothly into the sauce, imparting its flavor without being chunky.

Cooking

  1. Searing the Pork: Heat the butter and oil in a frying pan over medium-high heat. Place the pork loins in the pan and fry until golden brown on both sides, approximately 3-4 minutes per side. Move the cooked meat to a warm plate and cover.
  2. Creating the mustard sauce: In the same pan, lower the heat to medium and add the onion, cooking until soft and translucent. Deglaze the pan with white wine (or water), scraping off any brown bits from the bottom to add depth to the sauce. Allow the liquid to reduce by half, then stir in sour cream and mustard. Cook until the sauce thickens to your liking, then season with salt and pepper.
  3. Combining: Return the pork fillets to the pan, coating them in the mustard sauce, and simmer for a few more minutes until the pork is heated through.

Tips for the best pork in creamy mustard sauce

  • Make sure your frying pan is properly heated before adding the pork fillets. A hot pan ensures a golden, crispy sear that locks in the flavors.
  • If you find the mustard sauce too thick, you can thin it with a bit of chicken stock or water until the desired consistency is reached. Conversely, if it’s too thin, allow it to simmer for a longer period, or mix a tablespoon of sour cream with a teaspoon of flour and integrate it into the sauce for thickening.
  • To prevent the sour cream from curdling, add it to the sauce when the heat is lowered and stir continuously. Or mix it with a bit of flour just before adding to the pan.

Recipe variations

  • Substitute half of the sour cream with heavy cream for a richer, creamier texture.
  • Add butter at the end for extra richness.
  • For added flavor, sprinkle fresh herbs like parsley, chives, or dill over the finished dish before serving.
  • Use Dijon mustard instead of regular mustard for a tangier and slightly spicier taste.

Yes, you can. However, make sure to adjust the cooking time accordingly since loins are thicker cuts of meat.

A dry white wine, such as chardonnay or sauvignon blanc, pairs well with the flavors in this dish. The alcohol in the wine adds a unique depth of flavor to the sauce that may be missing with a non-alcoholic option.

Can I make this dish without alcohol?

Absolutely! Simply substitute white wine with an equal amount of water or chicken broth.

What can I use as a gluten-free alternative to flour?

Cornstarch makes for an excellent gluten-free substitute in this recipe and will also help thicken the sauce.

Storing and reheating
