You don’t need any fancy equipment or special skills to make this popular French dish – just a blender and a skillet. The first step to making apple crepes at home is blending the ingredients. A blender is the best way to whip up crepe batter because it allows you to create a completely smooth batter. Unlike pancakes, which often need a few lumps in them to be delicious, crepe batter should be lump-free.

To ensure your apple crepes don’t have lumps, place all the ingredients (softened butter, sugar, vanilla extract, milk, eggs, and flour) in your blender pitcher and blend until mixed and smooth. You can also use a food processor when making crepes. Simply pulse the ingredients together until the batter is smooth and free of lumps. After blending, place your crepe batter in the fridge to chill for at least an hour.

When you’re ready to start cooking your caramel apple crepes, start by heating a nonstick skillet over medium heat. When the pan is nice and hot, add one-quarter cup of batter and swirl the pan to spread the batter across the entire surface of the skillet. Allow the crepe batter to cook for around 30 seconds or until the edges are beginning to brown, then flip the crepe over and cook the other side for 30 seconds. Remove the crepe from the pan and continue cooking until all the batter has been used.

When you have finished making your crepes, it’s time to transform the plain crepes into caramel apple crepes by adding the apple crepe filling. Start by folding each crepe in half. Then, top the half with apple pie filling and drizzle caramel over the apples. Fold the crepe in half again and add some more caramel on top for added flavor. Serve your caramel apple crepes as-is or top them with whipped cream or a scoop of vanilla ice cream for a little extra sweetness.

Makes 12 crepes
Prep time: 5 minutes
Chill time: 1 hour
Cook time: 15 minutes

Ingredients

  • 3 tablespoons butter, softened
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cup milk
  • 2 eggs
  • 1 cup flour
  • 1 can apple pie filling
  • ¼ cup caramel sauce

  • Place butter, sugar, vanilla extract, milk, eggs, and flour in a food processor or blender.

  • Blend until smooth, around 30 seconds.

  • Place batter in the refrigerator to chill at least one hour.
  • Heat nonstick pan over medium heat until warm, then add ¼ cup crepe batter. Move the pan in in a circular motion to spread the batter over the pan. Place back over heat and cook for 30 to 45 seconds on one side, then flip and cook another 30 seconds on the other side.

  • Continue cooking crepes until all the batter has been used. When all the crepes are cooked, begin stuffing each crepe with apple pie filling.
  • To stuff the crepes, fold each crepe in half and spread apple pie filling evenly over the top.

  • Top with a drizzle of caramel sauce, then fold the crepe in half again.

  • Repeat the process until all the crepes are filled.
  • Drizzle more caramel sauce over the top of the crepes before serving.
