We absolutely adore soup! It’s a must-have for every lunch, completing our meals perfectly. Our absolute favorites are the tangy ones, packed with an abundance of veggies, like this delectable chicken wings soup. To achieve that desired sourness, we either prepare our own borscht for a special touch or generously add lemon juice and/or yogurt. Check out this borscht recipe for a truly delightful twist!

This chicken wings soup can be made with chicken backs, chicken breasts or chicken thighs in addition to the wings. It’s one of the easiest recipes and our go-to soup. It requires less time to prepare and cook, and it’s relatively light due to the low fat content in the wings. It’s also a great way to utilize chicken parts like back and necks, which aren’t commonly used in many recipes. This simple chicken soup is especially useful when purchasing a whole chicken.

I prefer to first boil the wings and then, when they are almost done, remove the meat from the bones before continuing to cook the soup. However, you can always keep the wings whole and skip this additional step (unless you belong to my exclusive club where we take extra care to separate the skin from the meat). Both methods work equally well, but using the whole wings can actually save you some time, if you’re comfortable with that.

I enjoy the freedom of adding an abundance of vegetables to this chicken wings soup. It’s a clever way to entice my daughter, who loves soups, into eating vegetables. While they may not retain their full nutritional value when cooked, opting for no vegetables at all is not a viable choice.

Is this soup nutritious?

Chicken wings are a great source of protein and offer several essential nutrients such as calcium, iron, and potassium. Adding vegetables to the chicken wing soup further increases its nutritional value by providing an array of vitamins and minerals in addition to fiber. Plus, with its low-fat content, this chicken wings soup is an ideal option for those looking to maintain a healthy diet with low calories.

How to serve this chicken soup?

When it comes to serving this delicious soup, you can add more flavor with mashed fresh garlic, green onions, fresh thyme, or freshly squeezed lemon juice. You could also serve it with hot sauce, pickled chili peppers, buffalo sauce, crumbled blue cheese, cream cheese or a dollop of sour cream. I’ve even had guests serving it with ranch sauce.

If you’re looking to add more bulk to the soup, consider adding egg noodles, dumplings, or even rice.

What to do with the soup leftovers?

Store leftovers in the fridge in an airtight container for up to four days.

You can also freeze the soup in the deep freezer, in ziplock bags or containers for up to three months. Thaw the soup in the fridge over night, reheat it on the stove top or in the microwave then stir in some fresh herbs and/or garlic powder/onion powder to revive the flavors just before serving. Add a bit of butter to enhance the soup’s richness and creaminess.

Is this recipe quick to make?

This recipe takes about 10 minutes of prep time and 60 minutes cook time so a total of 70 minutes total time. Wile it’s not super quick to make,  the result is definitely worth it. Plus, you can always cut down on cook time by using a pressure cooker.

How to make chicken soup with chicken wings

Ingredients:

  • 3 lbs chicken wings
  • 2 medium carrots, grated
  • 1/4 cup grated parsnip
  • 2 tbs grated celery
  • 2 medium zucchini, diced
  • 2 small potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 1 small can of diced tomatoes
  • 2-3 medium eggs
  • 1 handful lovage (or more if you like lovage as much as I do), chopped
  • salt and pepper to taste
  • 2-3 cups homemade borscht (add lemon juice to taste instead)

You will also need:

  • Turn on the stove to high heat.
  • Cover the chicken wings in water, bring to a rolling boil, then turn the heat to medium-high heat and cook for about 20 minutes.
  • Meanwhile grate carrots and celery and dice onions, zucchini, potatoes and red bell pepper
  • Remove the meat from bones (optional), separate the skin (optional), put the meat back in the pot and keep cooking the chicken broth.
  • Add potatoes and cook together with the wings for 10 minutes.
  • Add 4 cups of water
  • Add the rest of the veggies, except for tomatoes
  • Bring to a rolling boil then turn the heat to low and simmer for 20 more minutes until the meat is tender.
  • Add tomatoes in and cook for 5 minutes.
  • Add borscht (if you can’t be bothered to make your own, skip this step and add lemon juice to taste when serving the soup) and cook for 2 more minutes. 
  • Beat eggs and add to the soup. Blend in gently. Cook for 3 more minutes. 
  • Add salt and pepper to taste
  • Turn the heat off and add chopped lovage.
