Is there anything better for a hungry, cold and tired person than a hot, tasty, comforting soup? This meatballs soup recipe is one of our most favorites! We are sour soups people, we simply must have a bowl of sour soup almost every day, the sourer the better! No matter how hot is outside, we still have to have a bowl of tasty soup. It helps us feel full quicker while providing nutritious ingredients to our diet, like meat and vegetables.
Soups in general but sour soups in particular help with digestion, and let’s be honest, nothing make one’s day better than a happy tummy, right?
This simple but delicious meatball soup is basically a vegetable and meat soup that has been soured with a generous shot of fresh lemon juice or a homemade borsch (which is how we love to cook it! nothing beats that incredible taste homemade borsch gives to any soup!) Pork and rice meatballs bring savory flavor and substance to the vegetable broth that is used as a base for this recipe.

Meatballs soup recipe is so incredibly popular all around the world, almost every nation has it’s own version! From the Italian wedding soup, to asian meatball soup, Swedish meatballs soup or even Dutch meatball soup, you’ll find a little twist of the main meatball soup everywhere in the world!
And for all the good reasons! This is a super easy recipe and although the boiling process takes a while, until the meatballs get soft and fluffy enough to eat, it’s totally worth the waiting! So flavorful, satisfying, filling and sooo versatile! You could add basically any kind of vegetable but the ones listed here are my favorites and I think they make a great pair. If I were to add some more veggies, that would be zucchini.
You could also serve this meatballs soup recipe with sour cream, yogurt or even heavy cream, for a heavier taste, or add a pinch of hot paprika powder, or serve with hot chili peppers if you love spicy food.
As I’m a big fan of spicy food I almost always eat my soup with pickled chili peppers; I sometimes add some dried chili too. And if I feel adventurous, I add a bit of lemon juice (since we’re making this soup with the borsch recipe linked above) so my soup is really, really sour! A true delight to my taste buds.

Ingredients:

  • meat – For the meatballs I like to use lean pork meat, grounded but fat will add more flavor so if you’re not making this soup on a regular basis, I’d totally go for the fatter option.
  • rice – it helps to keep the rice soaked in water over night. This process helps the meatballs cook faster the next day.
  • eggs – fresh, range free eggs are always my option, they taste so much better than regular eggs and add more flavor to this soup too.
  • salt and pepper – to taste

For the broth:

  • I like to use carrots, potatoes, celery root, onion, fresh tomatoes, green (or red) bell pepper.
  • to season I use a handful of chopped lovage or parsley but my husband loves adding chopped dill too.
  • salt to taste
  • eggs
  • a little bit of oil

How to make meatball soup recipe?

  1. Chop onions and carrots and cook in a little oil until onions get a glassy, transparent texture
  2. In a large soup pot, add water and all veggies then bring to a boil. Reduce heat to medium and continue cooking.
  3. Meanwhile mix meat with egg and rice, salt and pepper.
  4. Form balls the size of medium to large walnuts and carefully place them in the soup pot.
  5. Reduce the heat to low and allow the meatballs to cook until soft and fluffy. After 1 hour test the meat balls to check if they are cooked
  6. Add borsch and continue cooking for about 3 minutes on high.
  7. Whisk the yolks and add to the pot after reducing the heat to low. Pour into the soup while stirring.

Ingredients

For the meatballs:

  • 1 lbs ground pork meat
  • 2 tbsp rice
  • 1 egg large
  • salt and pepper to taste

For the broth:

  • 12 cups water
  • 2 carrots
  • 2 medium potatoes
  • 1/4 celery root medium
  • 1 small onion
  • 1 tomato
  • 1 green pepper
  • 1 handful lovage or parsley chopped

  • Whisk the eggs and pour into the soup while stirring
