This tasty and healthy one pan turkey veggie bake is made with turkey breast and is loaded with yummy, colorful vegetables, making it a great dish for picky eaters too. Those bright colors are just so hard to refuse! So much delicious flavor!

I also made a simple sauce to serve my turkey dish. I simply smashed some garlic and mixed it with garlic then drizzled over the turkey and veggie. Pure heaven, you’re gonna love this one pan turkey veggie bake!

One Pan Turkey Recipe

Ingredients:

  • 1 lbs turkey breast
  • 4 potatoes
  • 1 large zucchini
  • 1 large bell pepper
  • 2 small onions, cut julienne
  • 5 large mushrooms
  • 2 green onions
  • vegetable oil to drizzle
  • salt and pepper to taste
  • 1 teaspoon mustard seeds or coriander
  • few sprigs fresh thyme

Directions:

  • Pre heat oven to 400 F
  • Line a sheet pan with baking paper
  • Slice and dice turkey breast and add to the pan
  • Dice potatoes and add to the pan
  • Add sliced bell peppers, onions cut julienne, sliced zucchini, sliced mushrooms and diced green onions
  • Drizzle some oil, add salt, pepper and mustard seeds.
  • Mix well then add thyme.
  • Bake for 20-25 minutes or until the turkey gets golden.
  • Serve with yogurt garlic sauce.
