It’s no secret we love pizza! But even the biggest pizza fans can get bored of the same old recipe, one needs to get creative every once in a while. And that’s how this easy stuffed pizza rolls recipe was born.

Vegetarian Stuffed Pizza Rolls Recipe

These delicious rolls are crusty on the outside and soft and a little juicy on the inside, filled with tomato sauce, mushrooms, peppers and gooey mozzarella. Whether you make it as an easy pizza fix, a yummy appetizer for a potluck or game days, a lunch or just dinner rolls with a twist, this stuffed pizza rolls recipe is so delicious and flavorful!

While this fun stuffed pizza rolls recipe looks pretty scrumptious, making it perfect for parties or as finger food at get togethers, it’s a no brainer and takes little to no time to make and bake. Serve these rolls simple or with extra cheese on top or dip in sauce like a simple marinara which always goes great with pizza. No matter what you choose, these will become your weakness with the first bite!

Vegetarian Stuffed Pizza Rolls Recipe

Ingredients:

  • 1 can pizza dough
  • a little flour for dusting the working surface
  • about 3 tbsp tomato sauce
  • 1 cup mushrooms, diced
  • 1 cup red bell peppers, diced
  • 2 cups mozzarella cheese, grated (after making the recipe I would suggest using the cheese cut in cubes instead of grated for a more gooey, chewy inside)
  • 2 tbsp butter, melted plus more to butter the baking dish
  • 1 tsp dry thyme
  • salt and pepper to taste – optional, depending on your tomato sauce
  • marinara sauce for dipping – optional

You will also need:

  • Preheat oven to 425 degrees
  • Unroll pizza dough onto a lightly floured surface and press into a larger rectangle.
  • Cut rectangle into squares (I first cut it in 16 squares then I realized I got some dough left and I made 9 more so I ended up with 25 squares).
  • Add tomato sauce, mushrooms, peppers and cheese (or your favorite ingredients) into the center of each square.
  • Gather the sides of each square up and pinch closed to create a ball (pinch well or some of your cheese and sauce will spill out during baking as you can notice on my rolls)
  • Butter a baking dish.
  • Place each ball seam side down in the baking dish.
  • Stir melted butter and thyme together then brush tops of rolls with the mixture using a brush.
  • Bake for about 15 minutes or until rolls are golden brown.
  • If you like to add extra cheese on top, do so about 7 minutes into baking.
  • Serve simple or with dipping sauce.
