When it comes to soups there are a couple of things that, at least for me, are mandatory. They should be creamy, comforting, and most important, easy to make. Bonus points if I have most of the ingredients on hand. This cheddar beer soup marks all the boxes and then some more! It’s not only super easy to make and incredibly flavorful, but this easy beer cheese soup is also the perfect meal to cook when you need to feed a crowd.

It all depends on what you are making this cheddar beer soup for! When I make it as the main dish, I like to top it with some crumbled bacon and some sauteed broccoli florets (if you love broccoli, this is another recipe we like a ton). Sometimes, I also serve it with some bread on the side so you can dip it and grab even the last bit of creaminess.
If I’m serving it as an appetizer, I prefer to serve the cheddar beer soup recipe with saltine crackers and some raw veggies (think, baby carrots and celery sticks) so there are more options to dip and mix.
How to make cheese beer soup?
There are literally a million different ways to make a cheese beer soup because it’s been around for so long. Some people prefer to only use a combination of beer, milk, and a whole lot of cheese. There are also other options (like this one!) that mix in some other ingredients to make it more interesting.
I like to make it with broccoli and an extra splash of stock to keep it lighter and not as thick. For this recipe, I used white cheddar cheese because the flavor it’s milder than the yellow/orange one. However, feel free to use whichever you have on hand. Both are going to be incredibly delicious.

Cheddar beer soup
Melt butter in a pot over medium heat. Add onions and cook until translucent. Add garlic and cook for 30 seconds more or until fragrant.
Add flour and cook for 2 minutes, mixing constantly.
Slowly incorporate stock, beer and milk, mixing well after each addition and making sure there are no lumps left.
Season with paprika, oregano and onion powder and bring to a gentle simmer.
Incorporate broccoli florets and cook for 20 minutes or until broccoli is tender.
Add white cheddar cheese and cook for 2 more minutes or until fully melted.
Remove from fire and rectify with salt and pepper.

- 3 Tbsp flour
- 2 Cups chicken stock
- ½ Cup beer
- 1 Cup milk

- ½ Tsp oregano
- ½ Tsp onion powder
- Salt and pepper to taste
