Ingredients

  • 2 Tbsp olive oil
  • 1 Garlic clove, minced
  • 1/2 Pound ground beef
  • One red onion, chopped
  • 1 Tsp salt
  • 1 Tsp oregano
  • 1/2 Tsp paprika
  • 1/2 Cup tomato Paste
  • 4 Cups stock
  • 2 Sweet Potatoes, diced
  • 2 Cups tortellini

Directions

  • Heat the olive oil in a pot over medium heat.
  • Add garlic clove and onion and cook until translucent.
  • Add ground beef and spices and cook for 5 minutes or until brown.

  • Mix in the tomato paste and the stock and bring to a soft simmer. Let it cook for 5 more minutes.

  • Add tortellini and sweet potatoes and cook for 10 minutes or until the tortellini is done.
