This easy hamburger soup is the ultimate weeknight soup! It’s one of those recipes that’s super quick to make. It’s also incredibly delicious and so filling! However, what I love the most about this recipe is that it’s the perfect way to sneak some healthy veggies to even the pickiest of eaters.

I mean, they may not like some vegetables, or the texture they have, or the flavor, or you know, just how they look (how can kids be so creative with rejecting veggies, escapes me!). Can you freeze this easy hamburger soup?
I don’t advise freezing hamburger soup because it has potatoes and usually potatoes are one of those soup additions that don’t freeze very well.
But you can totally refrigerate it! I actually love to make a big big batch of hamburger soup and keep it in my refrigerator for a couple of days. It’s the perfect comfort food for quick lunches and satisfying dinners.
What to serve with hamburger soup?
The great thing about this recipe is that it’s a complete meal on it’s own! It has vegetables, fiber, carbs and protein so there’s no need to serve it with anything else.
However, if you are looking to add some extra things or make it more interesting you can serve it with some crusty bread on the side and some garden salad. You can also add some shredded cheese on top or sprinkle it with fresh herbs.
Hamburger soup recipe
Ingredients:
- 1 Tbsp olive oil
- 1 Pound lean ground beef
- Onion, chopped
- 2 Celery stalks, chopped
- 1 Cup tomato sauce
- 2 Potatoes, diced
- 3 Cups beef broth
- 2 Cups mixed veggies, frozen
- 1 Tsp Italian seasoning
- Salt and pepper to taste
Directions:
1. Heat oil in a large pan over medium heat.
2. Add beef and cook until browned but still pink in the center.
3. Add onion and celery and cook, stirring constantly, until onion is translucent.
4. Add tomato sauce and potatoes and pour beef stock. Mix until everything is well incorporated.
5. Bring to a gentle simmer and season with Italian seasoning. Simmer for 20 minutes or until the potato is tender.
6. Add the frozen veggies and cook for 3 more minutes, stirring constantly.
