Instant Pot corn casserole
Ingredients:
• 1 can, 14.75 oz, cream corn
• 1 can, 15 oz, whole kernel corn, drained
• 1 small package, 8.5 oz, corn muffin mix
• 1 cup sour cream
• 2 eggs
• 1 can, 4 oz, diced chilies
• 1 cup shredded cheddar cheese
• 1/4 cup melted butter
Directions:
- Grease an 8″ deep dish pan (one that will fit into your instant pot) with nonstick cooking spray. Set aside.
- In a large bowl, add corn, corn muffin mix, sour cream, eggs, chilies, cheese and butter and mix well.
- Pour into prepared pan.
- Place foil on top of the pan. Make a foil sling by folding a long piece of foil in half and placing it under the pan. Pull up the ends along the side of the pan.
- Place 2 cups of water into the instant pot and place the trivet into the pot. Using the sling, place the pan into the pot. Tuck the sling ends into the pot.
- Place the lid on the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 45 minutes.
- Naturally release pressure for 10 minutes before opening pot, discarding foil and serving corn casserole

- 1/4 cup melted butter
