There’s something incredibly delicious about this baked balsamic chicken! I mean, it’s tangy and acidic in the best possible way! It’s also just a bit sweet and with the perfect hint of spiciness. In short, balsamic chicken is the type of chicken I always crave!

However, my old recipe was a bit time consuming. You needed to create a glaze in the saucepan, cook the chicken, separately cook a couple of sides. Sure, it was delicious but it was not weeknight friendly. Or at least, it wasn’t the best when you only had 30 minutes and just wanted to be in and out of the kitchen as fast as possible.

How to make baked balsamic chicken

Ingredients:

  • 2 Chicken breasts, boneless
  • ½ Pound carrots, chopped
  • ½ Pound potatoes, chopped
  • 2 Tbsp olive oil
  • 1 Tsp garlic powder
  • 1 Tsp onion powder
  • one Tsp oregano
  • ½ Tsp dried basil
  • ½ Cup balsamic vinegar
  • ⅓ Cup honey
  • Salt and pepper to taste

Instructions for balsamic chicken recipe:

1. Preheat oven to 400 degrees.

2. Lightly grease a baking pan.

3. Place the chicken breasts in the middle.

4. Wash potatoes well and peel carrots.

5. Cut potatoes into slices and cut carrots into sticks.

6. Arrange the carrots on one side and the potatoes on the other. Set aside.

7. In a small bowl combine olive oil with spices. Drizzle half over the potatoes and toss to combine.

8. In the same bowl mix in the balsamic vinegar and honey. Drizzle over the chicken and carrots and toss to combine.

9. Take to the oven and bake for 25 to 30 minutes.

There are a million different veggies options that pair incredibly well with this chicken. The favorites around here are:

1. Carrots: The balsamic glaze helps to caramelize the carrots so they end up super sweet and soft and totally delicious

2. Potatoes: Potatoes need to bake for the exact same time as chicken so they work great for this one pan meal. Drizzle them with olive oil and sprinkle them with herbs and Parmesan cheese to give them a kick!

If you don’t have those two options on hand or just want to experiment with other things you could also try with:

  1. Fixed this for diner tonight. Loved it except directions were faint. I did not cover until after 1 hour of baking. I baked at 375 as I used a glass dish. Flavor were perfect, hint of sweetness, and very good. After slicing the chicken, I poured the glaze over it. I will bake it again
