You know those times when people are coming over and you feel you need to do a million different things? Set up the table, clean the house, get ready etc? Well, this hot corn dip recipe is the perfect little appetizer to make in those times!

This delicious corn dip comes together in around 10 minutes of active time and around 15 minutes of baking (that you can use to do something else). Serve it hot with chips and some fresh cilantro chopped on top and you are all set! It’s the type of recipe that you’ll expect to get at your favorite Mexican restaurant but made at home. Add some refreshing drinks and you are all set!

What ingredients do you use to make corn dip with cream cheese?

What I love about this recipe is that it’s super easy to make and uses only pantry staples!

  • Corn
  • Cream cheese
  • Monterey cheese
  • Chopped onions
  • Lime Juice
  • Heavy cream
  • Spices

Just mix everything in a bowl, top with more Monterey cheese and take to the oven. Bake until it’s bubbling and slightly crispy and you are all set!

Yes! You can make it and store it in the refrigerator for up to 3 days! Once you are ready to serve it just take it straight from the refrigerator to the oven and bake for 15 minutes.

  1. Preheat the oven to 400 degrees.
  2. In a bowl mix the cream cheese with the heavy cream and the lime juice. Add the corn kernels and stir to combine. Add the garlic powder, onion powder, cumin, paprika and 1 cup cheese and stir to combine.
  3. Transfer to a baking pan and cover with the remaining Monterey cheese.
  4. Take to the oven and bake for 15 minutes or until golden and bubbly.

Ingredients

  • 3 Cups corn kernels
  • 1 Cup cream cheese
  • ½ Cup heavy cream
  • 1 ½ Cups Monterey cheese shredded
  • Juice from 1 lime
  • 1 Tsp garlic powder
  • 1 Tsp onion powder
  • 1 Tsp cumin
  • 1 Tsp paprika

Instructions
