Oh my, chicken taco soup! This is one of those soups that we make again and again over here. The main reason? It’s SO SO delicious everyone loves it! It’s also the perfect comfort food! This lovely chicken taco soup recipe is hearty, warm, cozy and tastes like a hug in a bowl!
But you know how usually comfort food dishes take a while to cook? This soup is not one of them. It’s super easy and quick to make, making it the perfect dinner.

How to serve chicken taco soup recipe
I love to serve it in big bowls without anything else. Just some chopped cilantro on top. However my family loves it when I serve it with fresh, homemade cornbread on the side.
When I feel a bit more festive, or I’m in a desperate need of a pick-me up I like to serve with a big dollop of sour cream on top, some shredded cheese and with nacho chips on the side. They are perfect when dipped in the soup!
Can you freeze taco soup?
This is one of those soups that you honestly don’t need to freeze. It takes around 30 minutes to make from start to finish so it’s a really quick dinner recipe.
However, you can also freeze it if you want to make it ahead of time! I like to freeze it in gallon freezer friendly bags because that way it’s easier to thaw and reheat.
This soup also reheats beautifully and can last for a couple of days refrigerated. Feel free to make a large batch to last for a couple days.
Easy chicken taco soup
Ingredients:
- 2 Tbsp olive oil
- 2 Onions, chopped
- 1 Cups frozen corn
- one Chicken breasts, diced
- 1 Tsp cumin
- 1 Tsp garlic powder
- ½ Tsp oregano
- 1 Tsp chili powder
- 1 Tbsp paprika
- Cup tomato sauce
- 1 Cup black beans, cooked and rinsed
- 2 Cups chicken stock
Directions:
1. Heat oil in a pot over medium heat.
2. Add onion and corn and cook until onion is slightly translucent.
3. Add chicken, cumin, garlic powder, oregano, chili powder and paprika and cook until golden on the outside.
4. Add tomato sauce and black beans and stir to combine. Cook for 2 more minutes stirring constantly.
5. Add chicken stock and bring to a simmer. Simmer for 20 minute or until the chicken is cooked thoroughly.
