- 1/2 Pound ground beef
- One red onion, chopped
- 1 Tsp salt
- 1 Tsp oregano
- 1/2 Tsp paprika
- 1/2 Cup tomato Paste
- 4 Cups stock
- 2 Sweet Potatoes, diced
- 2 Cups tortellini
Directions
- Heat the olive oil in a pot over medium heat.
- Add garlic clove and onion and cook until translucent.
- Add ground beef and spices and cook for 5 minutes or until brown.
- Mix in the tomato paste and the stock and bring to a soft simmer. Let it cook for 5 more minutes.
- Add tortellini and sweet potatoes and cook for 10 minutes or until the tortellini is done.
