In order to stuff pork chops you need to slice them open on the side. This can be a bit tricky if you have never done it before but here are some useful tips:
1. Use a sharp knife: The sharper the better because it will allow you to do a clean, fast cut without causing a lot of damage to the pork chop.
2. Make a tiny incision first with the tip of the knife: This will guide the knife where you want to make the cut.
3. Ask your butcher to thickly slice your pork chops or buy thick ones from the supermarket. Truth is, slicing a thin pork chop is much more difficult than slicing a thick one so always look out for the thicker ones.

Cooking stuffed pork chops
Ingredients:
- 3 Tbsp butter
- 1 Onion, chopped
- 4 Cups spinach, chopped
- ½ Pound ricotta cheese
- 1 Tsp garlic powder
- ½ Tsp onion powder
- ¼ Tsp nutmeg
- 4 Pork chops, sliced open
- Salt and pepper to taste
Directions:
1. Melt butter in a large skillet over medium heat.
2. Add onion and cook until translucent.
3. Add spinach and cook for 3 minutes or until just wilted.
4. Transfer to a bowl leaving some of the butter behind.
5. Add ricotta, garlic powder, onion powder, nutmeg and salt and pepper. Mix until combined.
6. Stuff the pork chops and transfer to the same pan used to cook the onions.
7. Sprinkle with salt and pepper and cook 2 minutes per side or until golden.
8. Add 3 tbsp water, cover with a lid and cook for 4 minutes.
9. Remove the lid and cook for 1 more minute per side or until golden brown.
